The vinification of Barolo Gavarini Chiniera involves alcoholic fermentation in temperature-controlled stainless steel tanks, with daily pumping over. Once malolactic fermentation has taken place, the wine is aged in 25 hectolitre Slavonian oak barrels. "The 2016 Barolo Gallinotto is an attractive, gracious La Morra Barolo. The tannins need time to soften, so I would cellar it for at least a year or two. Dried cherry, mint, orange rind, crushed rose petal, anise and sweet spice all develop in the glass.
