Vinification: the grapes are harvested by hand, at optimal ripeness, in small baskets and transported to the cellar for gentle pressing in a pneumatic press. The must is left to rest for 24 hours (debourbage) to allow the coarse lees to settle. The wine is poured by gravity into small oak barriques for alcoholic and malolactic fermentation. The must is mixed (batonnage) very rarely during the malolactic fermentation, to allow the wine to develop without oxidative notes
Aging: aged for 15 months in oak barriques (50% new) and then bottled
