Once malolactic fermentation has taken place, the wine is aged in 25 hectolitre Slavonian oak barrels. After bottling, the Barolo Gavarini Chiniera rests in the cellar for 8-10 months before being sold.

"The 2016 Barolo Gallinotto is an attractive, gracious La Morra Barolo. The tannins need time to soften, so I would cellar it for at least a year or two. Dried cherry, mint, orange rind, crushed rose petal, anise and sweet spice all develop in the glass.
