Corton's whites are always structured Chardonnay and need at least 10 years of aging to express themselves in the best way. It will express itself best after 10 years but will continue to mature for 20.

On the palate, a fresh wine, young with character, lively and amiable, with a rich return of spicy aromas. The finesse of the taste and the delicacy go hand in hand with a structured and durable structure.

Wine with an opulent aromatic register that orientates itself when young, mainly on flint, flint. Lively and full of complexity, a very elegant wine.

Color: straw yellow. Bouquet: ripe and fresh with hints of flowers and fruits. The floral scents, acacia and citronella are associated with grapefruit and caramel. Taste: intense and harmonious rather soft and perfectly supported by a vivacity without too much aggression. Flavor prolonged by a strong persistence of minerals associated with a delicate hint of wood.

Slightly straw-colored with pale gold reflections. The aromas of white flowers combine with honey, reminiscent of gingerbread. In the mouth the elegance is safe, pleasant, maintaining the freshness of the grape without giving in to excessive softness.

The nose has hints of exotic fruit and white flowers. On the palate it is elegant and soft, with good acidity and a finish accentuated by pleasant mineral notes. Joseph Viola, chef and patron of Daniel & Denise, suggests drinking it as an accompaniment to cannelloni stuffed with the tenderest parts of poulet de Bresse and chopped mushrooms.

The wine is fermented with indigenous yeasts, aged for 12 months in barriques. It is a mineral and austere chardonnay that needs a few years to express itself at its best.

This Chardonnay has a fruity and fresh note. Traditional winemaking for a wine that is to be drunk young for an aperitif and a simple, cosy meal. The wine remains in the oak barrels on lees for eighteen months without racking. No new oak barrels, majority of large containers of 350 to 600 liter. End of ageing in vat during 6 months.
