The nose has hints of exotic fruit and white flowers. On the palate it is elegant and soft, with good acidity and a finish accentuated by pleasant mineral notes. Joseph Viola, chef and patron of Daniel & Denise, suggests drinking it as an accompaniment to cannelloni stuffed with the tenderest parts of poulet de Bresse and chopped mushrooms.

The wine is fermented with indigenous yeasts, aged for 12 months in barriques. It is a mineral and austere chardonnay that needs a few years to express itself at its best.

Lively, fruity nose, mixing notes of lemon, white flowers, pineapple and yellow peach. The palate is nervous and remarkably fruity, combining the fatness, saltiness and sap of a ripe wine with the freshness of a thirsty wine.

100% Chardonnay Vinification: manual selection of the grapes. Very delicate processing, fermentation with indigenous yeasts in oak barrels Aging: 15 months in small oak barrels (2/3 used, 1/3 new). No clarification or filtration. Bouquet: aromas of flowers, ripe fruit, pastry and hazelnut Taste: fresh and balanced, very fine

Colour: Golden with pale green hints. Bouquet: Intense on notes of vanilla and crème brûlée, with richer notes of dried apricots and orange blossom intermingling. Palate: Round and rich, freeing avours of exotic fruits, lime zest and citrus fruit jam. The freshness persists in the nish, supported by elegant woody overtones.

This Chardonnay has a fruity and fresh note. Traditional winemaking for a wine that is to be drunk young for an aperitif and a simple, cosy meal. The wine remains in the oak barrels on lees for eighteen months without racking. No new oak barrels, majority of large containers of 350 to 600 liter. End of ageing in vat during 6 months.

Notes of lemon zest and white flowers that mingle with nuances of crushed chalk and oyster shell. On the palate, the wine is medium to full-bodied, elegantly glossy and vibrant, with a tight-knit core of crunchy fruit, bright acids and a long, pure finish.

The nose is fresh with aromas of peach and lemon zest. On the palate it is light, fresh and floral.
