Sparkling Wines

70% Pinot Noir and 30% Chardonnay, of which about 50% with reserve wines. Vinification in wood for 20%. Natural fermentation without added yeasts, only indigenous yeasts are used. First élevage on yeasts that lasts about a year without burning the stages; the wine is slowly clarified as it was 50 years ago. Bottling without filtering or sizing. Dosage 3/4 g / l.

Persistent foam with very fine grain perlage. Straw yellow color with greenish reflections. Complex, very fine bouquet with pleasant fruity notes of citrus and peach. Dry taste, pleasantly fresh, with a good and balanced structure.

This blend draws all the power and depth of great wines from a grand perpetual reserve started in 1995. Dense, sweet and spicy flavors glaze this wine, wild strawberries, cloves, calamansi citrus and almond paste, this rich aromatic is found on the nose as well as in the mouth in a charming and enigmatic ensemble.
