Sparkling Wines

70% Pinot Noir and 30% Chardonnay, of which about 50% with reserve wines. Vinification in wood for 20%. Natural fermentation without added yeasts, only indigenous yeasts are used. First élevage on yeasts that lasts about a year without burning the stages; the wine is slowly clarified as it was 50 years ago. Bottling without filtering or sizing. Dosage 3/4 g / l.

Intense golden yellow color with amber reflections. The nose is elegant with notes of peach, honey, dried fruit, brioches and toasted hazelnuts. On the palate it is creamy and intense with notes of dried fruit and a long savory finish

"La Biographe" is by definition the champagne that best defines the style of the Maison, with a classic cuvée of Chardonnay, Pinot Noir and Pinot Meunier, with a small addition of reserve wines. A perfect representation of Terroir and corporate style.

Golden appearance with slightly coppery reflections. The aroma is expressive, reminiscent of the fleshy fruits of the apple orchard. The taste is vinous, long and straight; ripe apple and pear dominate.

The appearance is golden with greenish and slightly salmon reflections. The aroma is open with a dominant of toasted and buttered (brioche, bread crust); evolution on dried fruit (hazelnut, toasted almond), honey and spice bread. The taste is fresh, lively at the attack with a predominance of toasted notes and a creamy aftertaste.

"Assemblage 2009" by Bruno Paillard is obtained from the assembly of chardonnay (50%) and pinot noir (50%), 20% fermented in vats.

To the eye: pale gold, brilliant, almost silver, with green reflections. Very fine perlage and a little less abundant than the other wines of the Maison Bruno Paillard due to its less powerful fermentation in the bottle. It is a Brut Nature obtained from the grapes of the best Franciacorta crus and is the result of aging on the lees for over 48 months. A wine with a strong character, with great personality.
