Sparkling Wines

This is an abundant and delicious harvest, this 2006 Blanc de Blancs Vintage recalls the scents of calissons and candied orange peel. Harmony and generosity are combined. Elegant wine that can be appreciated as an aperitif, but also at the table.

70% Pinot Noir and 30% Chardonnay, of which about 50% with reserve wines. Vinification in wood for 20%. Natural fermentation without added yeasts, only indigenous yeasts are used. First élevage on yeasts that lasts about a year without burning the stages; the wine is slowly clarified as it was 50 years ago. Bottling without filtering or sizing. Dosage 3/4 g / l.

Lively and greedy attack that expands generously on the palate. The aromatic richness of the nose is found in the mouth in a lively and chiseled texture. Narrow, salty and extremely persistent finish.

Taste: lively attack thanks to a low dosage that respects the authenticity of the wine. You can feel the minerality of the chalk. Flavors of citrus, almond, toasted bread immediately impose themselves

The elegance of the fruit is associated with its delicacy: flavors of pear, fresh almonds and tarte Tatin are distinguished by the uniqueness of a chiseled and mineral Pinot Noir with notes of citrus and candied lemon. A velvety persistence in the mouth with a salty note in the finish.

Pinot Noir derived from two single plots adjacent to the House in Aÿ: non-grafted vines grown in the traditional en foule layering system and worked entirely by hand.
