The name Cervaro derives from the noble family that owned the Castello della Sala during the fourteenth century: the Monaldeschi della Cervara. The Antinori family purchased the estate in 1940. The first vintage of Cervaro della Sala produced was 1985, introduced on the market in 1987. This wine has won numerous awards and has won several important awards.

Le Rochoy is a unique hill in Sancerrois. It was once a Gallo-Roman quarry called "Rochetum". Flints scattered on the ground accumulate heat during the day and release it at night.
