Passiti

This rare passito is the result of Malvasia and Corinto Nero grapes grown on the volcanic soil of the island of Salina. The grapes dried in the sun on cane racks are then vinified. This is followed by slow fermentation and maturation in small oak barrels. An interesting combination with soft blue cheeses and goose liver, with pastries, chocolate desserts and ice cream.

With its translucent gold-topaz color it introduces sweet aromas, where you can recognize aromas of candied fruit and quince, honey, salty and iodine notes, loquats, spice cues, pepper puffs, sultanas and liquorice root. Complete and complex taste, with an overwhelming alcoholic note kept however in harmony by the great flavor and freshness. 

Intense, persistent, pronounced bouquet, hints of dried clary sage, jam, vanilla and honey; sweet flavor - not sweet, broad with an elegant and caressing body. Seduction wine.

Color: from yellow - gold to amber Bouquet: very aromatic and spicy bouquet with scents of honey, vanilla, quince and candied orange peel. Taste: full and voluminous body, excellent balance between residual sugar, acidity and alcohol.

Color: amber, very dense, consistent with obvious brightness Bouquet: intense and complex with hints of evolved fruitiness: clear aromas of candied citrus fruits and sultanas in spirit Taste: sweet, which immediately opens up on candied fruit and toasted almonds and on a savory and fresh note; then the sip becomes pleasantly warm, enveloping and soft.

Viene creato nella parte più alta della tenuta di Villa Bianchi dove, grazie alle particolarissime condizioni climatiche determinate dall’alternanza tra elevata umidità e ventilazione più asciutta, a temperature piuttosto basse, le uve Sauvignon Blanc vengono intaccate da Botrytis Cinerea nella sua forma più nobile, regalando a questo vino sapori e profumi incredibilmente complessi e rari.

Passito wine made from Moscato grapes harvested by hand and dried on wooden racks in an open environment for several weeks.

Intense golden yellow colour with amber hues. Intense aroma with notes of jam, candied citrus fruits and cooked apples enriched with sweet spices. Sweet with hints of fruit, even dried fruit and spices, in an elegant balance with a nice acidic and savoury vein.
