It is harvested during the coolest hours of the day and with the use of dry ice to preserve the characteristics of the grapes. It remains sur lie for a minimum of thirty months in the bottle before being degorged.

Blanc de Blanc originated as a limited edition of Doppio Erre Di, from which it differed in aging time. Today it is made with only the must flower of 100% Chardonnay grapes, fermented exclusively in steel. After a period of at least 36 months on the lees, a long aging in the bottle follows, giving, in addition to the usual freshness, a pleasant evolutionary note and an important structure....
