    Colour: Carmine red, very intense and with shades tending towards garnet red with ageing

    Nose: Ample, persuasive and pleasant. It is characterised by floral notes of rose, officinal herbs and hints of fruit preserved in alcohol. Spicy notes typical of the Nebbiolo vine complete the olfactory picture.

    Taste: Full, warm and persuasive, with abundant, fine and sweet tannins. Elegant and very persistent. Long, dry finish typical of the Nebbiolo grape variety.

    SOIL TYPE, EXPOSURE AND ALTITUDE: The soil is a white calcareous, slightly clayey marl of marine origin. Altitude ranges from 200 to 350 metres above sea level. Southern exposure.

    VINIFICATION METHOD: Harvesting is carried out by waiting for the grapes to slightly over-ripen around the third decade of October. The grapes are harvested by hand and after an initial sorting are placed in perforated crates. The grapes are destemmed, gently crushed and the must is placed in fermentation tanks. Maceration is conducted at controlled temperatures. Vinification takes place entirely in stainless steel with the aid of frequent punching-down and pumping-over. Maceration is carried out for about 12-15 days, followed by very soft pressing and the wine is placed in steel tanks to finish alcoholic fermentation and malolactic fermentation. The wine is then racked into large oak barrels for ageing for 34-36 months. After this period, the wine is bottled during the summer months without any filtration treatment. Once bottled, the wine matures in glass for at least 14-16 months before being marketed.
