Champagne Blanc de Blancs Extra Brut Grand Cru - Bruno Paillard Magnum 1,5 lt.
To the eye: pale gold, brilliant, almost silver, with green reflections. Very fine perlage and a little less abundant than the other wines of the Maison Bruno Paillard due to its less powerful fermentation in the bottle. On the nose: lively and floral, the first hints are clearly of citrus - green lemon and grapefruit - with hints of white flowers. With oxygenation, the toasted almonds and the bread crust stand out. In the mouth: the beginning is lively and causes a complex sensation thanks to citrus and white berried fruits. You can feel the minerality of the chalk. Fresh, long and persistent finish.
Like all fine wines, it is also fragile: it must be kept with great care and served after cooling in the bucket. It is the ideal wine for an aperitif but also goes very well with fish; it can also accompany the entire meal as long as there are no overly spicy or sweet dishes.
Chardonnay coming exclusively from grand cru - classified 100% - of the famous «Côte des Blancs». We still practice the once reserved winemaking with «Demi Mousse» champagne: during the pouring before the second fermentation - in the bottle - and aging, less sugars are added than you do with a normal champagne. We therefore get a little less foam: 4.5 atmospheres of pressure compared to normal 5 - 6. This type of vinification is perfectly suited to Chardonnay to which it gives a great superior finesse, elegance and freshness. DOSAGE After disgorgement, the date of which is clearly written on the back label, the Blanc de Blancs Grand Cru rests for 10 months in the cellar before entering the market. Like all our champagnes, it is very lightly dosed (5 grams of sugar residue per liter). It is an extra brut.
