The Champagne house Bruno Paillard was born from a man's desire to create a pure champagne, very different from the others. Bruno Paillard, descendant of a family of mediators and vignerons, in Champagne for more than three centuries, created his own Maison in 1981. His requirement: to obtain the quintessence of every great Champagne cru and then to create a great wine with the assembly. The result is one of the most internationally recognized cuvées for connaisseur, distributed exclusively in selected wine bars and on the tables of the best chefs. This daily work rests on the work of a 33-hectare vineyard, which divided over 15 crus, today provide more than half of the Maison's need for grapes. Each of the 97 plots is worked - soil processing and organic treatments - in order to favor biodiversity and the deep development of the roots. This allows to extract the extraordinary chalky typicality of the territories. Only the first pressing of the best grapes is used to be vinified. In the cellar then the stay on the lees is long, two to five times higher than the average, depending on the type of cuvée. All wines are extra brut, the date of disgorgement is always written on the back label and the style is recognized as the set of purity, complexity and minerality. Today the Champagne house Bruno Paillard is totally independent and managed by Bruno Paillard and his daughter Alice who continues the 1981 project.
