Champagne Assemblage 2012 - Bruno Paillard

"Assemblage 2012" by Bruno Paillard is obtained from the assembly of pinot noir (60%) and chardonnay (40%), 20% of which undergo vinification in small old oak vats. Appearance Golden yellow color, persistent and delicate effervescence. Nose The nose combines fragrances of fruits (cherry, white peach), dried figs, honey and fresh ginger with intense notes of white flowers (begonia). The ventilation reveals aromas of cocoa and ash. Mouth Lively and precise, the attack precedes a mouth faithful to the nose, which seduces with its greed, density and refreshing and persistent salinity.
