Color: ruby red
Perfumes: fresh red fruits, cherry, rose hip
Taste: red fruit of forest and red apple, intense and persistent, tannic and with good body, balanced
Pairings: throughout the meal, especially with dishes accompanied by rich sauces
Vineyard management: Vineyard completely hand-made: too steep and dangerous to allow any motorized vehicle to access it. Inter-row grassing, with copper and sulfur treatments according to need. Between July and August at least two thinning in the vineyard are made, followed by manual selection at the time of the grape harvest, which takes place in 20kg baskets.
Vinification: Upon arrival at the winery, the grapes are crushed and de-stemmed and left to ferment and macerate in stainless steel tanks for around 8-10 days at controlled temperatures (28 ° -29 ° C).
Aging: At the end of the malolactic fermentation which took place for about two months in steel tanks, the wine is still in steel for about another 8 months, then bottled without filtration or clarification.
