Vineyard management: Grassing of the inter-row, with copper and sulfur treatments as needed. Between July and August at least two thinning are done in the vineyard, followed by manual selection at the time of the grape harvest, which takes place in 20kg baskets.
Vinification: Upon arrival in the cellar, the grapes are crushed and de-stemmed, and left to ferment and macerate in a horizontal rotomacer for about 21 days at controlled temperature (30 ° -31 ° C).
Aging: At the end of the malolactic fermentation which took place for about two months in French oak, the wine ages for another 24 months in barriques (30% new). No filtration or clarification.
