Vinification: use of carefully selected grapes, from which only the must resulting from the softer pressing of the grape is taken

Aging: aging in steel barrels until the draft and then at least 30 months on the lees

Bottling: during the tirage no sugar is added, but grape must from the last harvest with a residual sugar that triggers the second fermentation in the bottle
