In Vincelles, a municipality in the western Vallée de la Marne, the Maison Durdon Bouval has been running its vineyards for four generations in which it cultivates Chardonnay, Pinot Noir and Pinot Meunier in vineyards that rest on hills facing south / south-east, the most illuminated by rays of the sun and soils rich in minerals. Ludovic and his wife Sandie, since 2009, have progressively started the conversion of all their 3 hectares to organic cultivation, in order to respect the ecosystem of their vineyards as much as possible. Today all their vineyards are certified organic and their cuvées are progressively becoming organic certified. In 2017 Ludovic and Sandie definitively started the conversion of the company to a biodynamic regime. The production of Durdon Bouval champagnes is characterized by technical rigor and precision in the execution of wonderful wines, with clear fragrance and dosages limited to the indispensable, to bring out the characteristics of the grapes and the terroir. The bunches are harvested manually and placed in small boxes to avoid crushing the skins and the start of alcoholic fermentation is carried out with indigenous yeasts. Production that today slightly exceeds 10,000 total bottles: Durdon Bouval is a small, splendid reality that gives life to Champagnes that really leave their mark.
