The body is an intense yellow colour with golden-brown reflections. The bubbles are fine and delicate. The intense, very fruity nose develops aromas of peach and apricot compote enhanced by subtle notes of grilled brioche and vanilla. The attack on the palate is broad, soft and fruity, with dominant flavours of yellow peach. The finish is pronounced and expressive, subtly accentuated by notes of forest. The champagne of the 'Folies de la Marquetterie' cuvée, intense and harmonious, is distinguished by its richness and complexity.

The Château de la Marquetterie, a small jewel located in the heart of wine-growing Champagne, was, before the French Revolution, the residence of the writer Jacques Cazotte, the author of The Devil in Love, and the scene of country festivals where philosophers and Enlightenment writers used to meet. General de Castelnau made it his quar tier general during the Battle of Champagne in 1915. Even before him, the Benedictine monk Jean Oudart discovered some of the secrets of champagne fermentation there at the end of the 17th century. The first champagne from a single estate in the brand's history, the 'Folies de la Marquetterie' is a blend of 45% Chardonnay and 55% Pinot Noir exclusively from the grapes of the Folies vineyard, overlooking the Château de la Marquetterie, the cradle of the Taittinger family's champagne. In the selected plots, a "green" harvest is carried out to achieve optimum sugar content and maturity. At the end of the harvest, only the juice of the cuvée (first pressing) is kept. Each plot is vinified in small volumes while some batches in large oak barrels. A slow maturation of 5 years in the bottle completes the harmonisation of this wine.
