Vinification: traditional in stainless steel at a temperature of 28°C, frequent pumping over. Maceration for 20-30 days to obtain a fresher and more immediately consumable product, although the structure allows a life of more than 15 years.
Ageing: 8-9 months in 500-litre Allier tonneaux used for a very long time.
Serving recommendations: first courses, medium-bodied main courses, grilled meats, cheeses
