The Barolo of Cascina Pajana is born with a fermentation in steel tanks for a period of 10-15 days in the presence of the skins and until the complete exhaustion of the sugars of the grape. Aging is carried out in Slavonian oak barrels for 3 or 4 years. After a one-year refinement in bottle, the Barolo of Cascina Pajana is intense, ethereal but full and robust, of a garnet red color with orange reflections that become more evident with aging: a complex, harmonious and fascinating wine that continues to evolve showing new facets.
