Pietradolce Etna Bianco is made exclusively from Carricante grapes, obtained from vines cultivated on loamy-sandy soil with abundant volcanic rock, on Etna's northern slope at an altitude ranging from 700 to 800 metres above sea level. Manual harvesting takes place between the end of September and the beginning of October. The soft pressing, followed by 4-6 months of ageing in stainless steel, gives a wine with a strong, fresh and lively timbre.
It is between Solicchiata and Passopisciaro, on the northern slope of Etna, that we find Pietradolce, founded and run by the Faro family and divided into three different plots. Thirty-five hectares of the property, between 600 and 900 metres above sea level, made up of vines that are between 50 and 65 years old of Nerello Mascalese predominantly with a small part planted with Carricante, from a 120-year-old pre-phylloxera vineyard, from whose grapes the Archineri Etna Bianco and Sant'Andrea are vinified. Pietradolce's philosophy is to respect the individual terroirs by vinifying the grapes separately, thus enhancing the smallest nuances. Soils of a franc-sandy nature with an abundant presence of mineral elements, a gift from Etna, give the wines unique peculiarities, where the true standard-bearer is Vigna Barbagalli, from almost 100-year-old pre-phylloxera sapling vines. A great love for their land: this is the philosophy behind the work of the Faro family, which after only fifteen years has confirmed itself as one of the greatest interpreters of this extraordinary land.
