    Nose The long stay on the lees gives this wine unmistakable ageing aromas (ranging from the classic bread crust to freshly baked brioches or croissants) over an extremely variable background that ranges from the complex fruity and floral characteristic of blended sparkling wines

    Taste This sparkling wine has a fine perlage that enhances the wine's taste-olfactory qualities. Fruity notes are enhanced by both the effervescence and acidity of the sparkling wine. The alcohol aids the evolution of the taste-olfactory sensations with its pseudocaloric sen sation, giving rise along with the perlage to the sensation of "creaminess" found in finely crafted sparkling wines and which counterbalances the hardness, that is, the sensations of freshness and savoriness found in the opening. Persistence is where the Metodo Classico sparkling wine plays the difference at the taste level.     Classification Classical method 50% Chardonnay - 50% Pinot Noir Production area The vineyards are located in the municipality of Barge, in the hamlet of Assarti Grapes or vines used International white and black grape varieties Guyot training system Maximum yield per hectare 80 quintals Harvest Manual harvesting in small crates of about 20 kilos Vinification The harvest is carried out separately to have grapes suitable for the production of the base wine. The two varietals are then vinified separately and blended in the spring when they are started to froth using the classic method of refermentation in the bottle. The sparkling wine ages on the lees for about 36 months before being placed on the market as brut nature
