The 2012 harvest of Pinot Noir took place in the second half of August and the excellent climatic conditions favored the development of primary aromas, amplifying the fruity notes of the bunch.
PERLAGE: fine, constant and persistent. COLOR: pale golden yellow with bright reflections.
BOUQUET: very intense and elegant, complex, with floral scents that are completed with hints of ripe fruit
TASTE: fine, savory and fresh, the aftertaste is persistent with vanilla notes that are captured in the long finish.
The excellence of this reserve has roots in the spectacular vintage that gave perfect Pinot Noir grapes, carefully selected and handpicked in boxes in the hilly vineyards in the areas surrounding Canelli at an average height of 350 meters above sea level. A small production obtained from 1.82 hectares of vineyards. The grapes are pressed whole and the must thus obtained is fermented in large vats at a temperature of 14 ° C for about 30 days. Aging sur lattes with batonnage to obtain the finest perfumes derived from the lysis of yeast cells. From this moment begins the long period of aging in bottle for 110 months. It is a brut with a limited dosage of about 6 g / l with a unique freshness characteristic for this thousandth. The dégorgement à la glace usually takes place with the use of a liqueur d’éxpédition aged in wood.
