Puligny-Montrachet Premier Crü "Les Combettes" 2017 - Vincent Girardin

AGE OF THE VINEYARD: 70 years
GEOLOGY: The vineyards are located in the village of Puligny Montrachet, south of the Côte de Beaune. The climate "Les Combettes" is north of Puligny between the villages of Meursault and Puligny Montrachet. Soil: clayey-calcareous. The subsoil consists of several layers of limestone. The slope is medium to steep. 100% chardonnay - Guyot with different annual processes in the vineyard (pruning, espalier / knotting, peeling).
VINIFICATION: The grapes are hand picked and selected during the harvest. They are pressed in a low pressure pneumatic press to favor a slow extraction. A cold decantation is then performed for 12 hours. The must is placed in oak barrels of 228 liters (25% new barriques) to carry out both the alcoholic fermentation and the malolactic fermentation.
AGING: relatively long on the fine lees: for 18 months. One month before bottling, the wine from the different barrels is placed in a stainless steel tank for assembly. The wine is finally refined and lightly filtered before bottling following the lunar calendar.
