Nuits-Saint-Georges 2020 - Nicolas Potel

It is mainly by producing wines from the region's most beautiful terroirs that Nicolas Potel, a leading Burgundian vigneron, has built an international reputation. His Villages, Premiers Crus and Grands Crus are recognised and acclaimed worldwide for their ability to offer purity of fruit and the exact reflection of their appellations and terroirs of origin. During all vinification, the cuvées are tasted two or three times a day to follow their aromatic evolution. After racking, a very soft pressing is carried out with a vertical press, followed by decanting before ageing in barrels. In the cellar, it was decided to avoid intervention as much as possible, allowing the wines to decant sufficiently for ageing on the fine lees for 12 to 16 months without racking and with a minimum of SO2, in order to protect them above all from carbon dioxide due to malolactic fermentation. The company follows the biodynamic calendar by trying to process the wines according to their style, both in the root and fruit days in order to best respect their singularity.
