    "The 2008 Comtes de Champagne Rosé is bright, steely and finely chiseled right out of the gate. It shows quite a bit or energy and also more overall tension than the Blanc today. It will be interesting to see how the 2008 ages, and if the fruit ever emerges. I suspect the 2008 will always remain a rather nervous Rosé, even if it is quite striking today.     Created as early as the 18th century, served at the court of the French kings. Rosé champagne lays the foundation for the success of champagne. Symbol of the joyful and liberating luxury of the Charleston years, it is still highly appreciated today. The Comtes de Champagne Rosé becomes a very rare and particularly exclusive pleasure. This cuvée is in fact produced only in the best years, from the Chardonnay and Pinot Noir vines. This is the rarest cuvée from Maison Taittinger, a legendary champagne. The Comtes de Champagne Rosé is made up of 30% Chardonnay Grand Cru from the most prestigious terroirs of the Côte des Blancs and 70% Pinot Noir, obtained from the Grand Cru of the Reims mountain. During the assembly, 12% of Pinot de Bouzy vinified in red is added, whose rather long pre-fermentation maceration provides a nice tannic structure with aromas of red and black fruits. Some light coppery reflections enhance the fine and creamy bubbles of this exceptional cuvée. Fresh and greedy, the nose is expressed with aromas of raspberry and black cherry, followed by light notes of peach and pear compote, all enhanced by delicately mentholated hints. On the palate, the extremely fine and precise attack leaves room for the perception of a clean tannic structure, which reveals all the strength of the limestone Grand Cru terroirs from which it was born. The mouth, persistent thanks to a brilliant chalky acidity and a delicious freshness, stretches into a finish of great aromatic purity leaving a persistent memory of delicate sapidity. It goes preferably with white meats, but it can also show its full potential as an accompaniment to a lobster. It is a formidable vintage whose great energy marries, in an absolutely refined way, both with the strong flavor of certain cheeses, such as Vieux Comté or Chaource, and equally well with the acidulous sweetness of baked pears or slime tart
