VARIETY AND PERCENTAGE: 100% Nebbiolo
SOIL TYPE, EXPOSURE AND ALTITUDE: The soil is a white calcareous, slightly clayey marl of marine origin. Altitude varies from 200 to 350 metres above sea level. Southern exposure.
WINE-MAKING METHOD: Harvesting begins in the second or third decade of October. The hand-picked grapes in perforated boxes are crushed, destemmed and placed in fermentation tanks. Vinification takes place entirely in stainless steel with frequent punching-down. Maceration is carried out for about 10 days at a controlled temperature. This is followed by a very gentle pressing, after which the wine is placed in steel vats to complete alcoholic fermentation and malolactic fermentation. The wine is then racked into large oak barrels for 18-20 months of ageing. Once bottled (without any filtration treatment), the wine matures in glass for at least 6-8 months before being marketed.
