A Chianti Classico in the strict sense, obtained mainly from Sangiovese grapes grown on sandy and clayey soils and aged in large oak barrels. It has a ruby color and the nose is slightly wild. On the palate, however, it expresses great elegance and is easy to combine with classic meat and cheese-based foods.
Fermentation with native yeasts in stainless steel at about 24 ° C; selected yeast inoculation only if necessary. Maceration on the skins for 10-15 days. Spontaneous malolactic fermentation in cement tanks. Maturation in large oak barrels for 12 months and then in cement tanks for 11 months. The colorino is aged separately in amphora. It is then aged in the bottle for a few months before being sold.
