Francois Bitouzet is a perfectionist and both he and his team are constantly working to produce great wines and raise their standards year after year. Francois took over the reins of the domaine from his father Vincent in 2005 and continued his father's philosophy of natural agriculture, who for years had abolished the use of pesticides and herbicides, implementing and evolving from these bases a reasoned agriculture approach. Yields per hectare are meticulously controlled and care and attention is paid to every stage of winemaking. „Whether on the vine or in the cellar, nothing is systematically managed at Domain Bitouzet-Prieur. We observe, we monitor, we taste, we discuss and then we make the appropriate decisions“. There is no standard approach in his cellar but each wine follows a different path aimed at enhancing the exceptional nature of the domaine's terroirs. The harvest is manual and great attention is paid to transporting the grapes to the cellar as quickly as possible. Again to enhance the uniqueness of its terroir, fermentation is carried out with indigenous yeasts and the use of new barriques is limited so as not to overpower the character and essence of the wines. The company produces both white and red wines with holdings in some of the best vineyards in Meursault, Puligny, Beaune and Volnay. The flagship of Domaine Bitouzet-Prieur is undoubtedly the Meursault 1er Cru Perrières, a vineyard that deserves to be promoted to Grand Cru.
