Laurent Ponsot left the historic family business, Domaine Ponsot, in 2017 to start a new adventure together with his son Clément and his team: based in Gilly-Lès-Cîteaux, the company is both a Domaine that produces cuvée from its own plots, 7 hectares in total both Négociant. They therefore source and collaborate with suppliers who produce only excellent grapes. The raw material is essential and is carefully selected by Laurent himself. The company's logo itself represents this desire to be both producers and "assemblers" of wines. Laurent Ponsot as many as 26 different Burgundy appellations. The company works with respect for nature, growing grapes without the use of chemicals, but reserves the right to take care of the vines with modern methods, if the situation requires it. "Haute couture", "Haute couture" is how Laurent decided to describe his wines. Laurent and Clément attach great importance to technology, convinced that it must contribute to the production of wines that are always faithful to their exceptional place of origin, making sure that they arrive at the table in perfect conditions. In this regard, they constantly introduce innovations, based on the results of Laurent's continuous research, such as the closure with an alternative cap, the use of neutral gas instead of sulfur for aging, the temperature control of the cases, the presence of codes for authenticity etc. The particular corks used preserve all wines from premature oxidation and the risk of cork scents; an innovative way to ensure long-term refinement of wine in the bottle. Subjected to accelerated aging tests, the cork remains completely inert and there is no risk that its materials migrate into the wine. Although it is not "natural", it is completely recyclable. It reacts exactly like a cork to heat and cold, lets the wine breathe, prevents it from leaking out and protects it. A creative and innovative mind never sleeps, especially Laurent's. Unconventional and modern labels, composite packaging (made with recycled products, new for Burgundy), bottles with unexpected characteristics: all of this is currently underway at the Laurent Ponsot company.
