"Vigna del Salice" is obtained from the pressing of Barbera d'Asti grapes coming from the oldest vines owned by the company, of high hills, facing south-east, where the vocation for the Barbera vine is higher.

The grapes are harvested entirely by hand around the middle of October, 120 - 130 days after flowering, carefully handling the bunches which allows to eliminate any unripe or damaged parts of the grapes.
The grapes - carefully placed in crates in order to preserve their integrity to the utmost - are taken to the cellar where the separation of the stalks from the berries takes place through the destemming - crushing.
The skins remain macerated in the must for a period ranging from 8 to 10 - 15 days. The fermentation takes place at 28 to 30 degrees Celsius, with appropriate pumping over.
At the end of fermentation, racking, followed by static decantation and decanting. Malolactic fermentation is favored, a sort of biological deacidification characterized by the transformation of malic acid, stronger, into lactic acid, weaker (in essence, taste acquires softness).
The wine matures in wood for about 6 months and is still aged in glass for at least 6 months before being released for consumption.

Organoleptic judgment Appearance: Deep ruby red color with violet reflections. Bouquet: vinous, fruity, c aldo, with hints of undergrowth. Taste: Complex, harmonious, intense and persistent, with a good structure.
