Colour: straw yellow with greenish reflections.
Bouquet: refined and elegant with vegetal aromas (sage and tomato leaf) and fruity notes of ripe peach.
Taste: intense and fairly persistent with full correspondence between nose and mouth. Pleasant finish with good flavour.

VARIETY AND PERCENTAGES: 100% Sauvignon Blanc
SOIL TYPE, EXPOSURE AND ALTITUDE: the soil is white calcareous marl, slightly clayey, of marine origin. The altitude varies from 200 to 350 metres above sea level. East exposure.
VINIFICATION METHOD: the harvest takes place in the second half of August. The grapes are harvested by hand in the early hours of the morning to prevent the heat from deteriorating their quality and, after sorting, are placed in perforated plastic baskets. After immediate pressing, the must undergoes static decanting, after which alcoholic fermentation begins at a temperature of 15-16°C. The entire production cycle leading up to fermentation is carried out by protecting the must with dry ice. Once fermentation is complete, the wine is aged in temperature-controlled steel tanks (max 18°C) for about 3 months. The wine is then bottled without any filtration. This is followed by at least 2 months of ageing in the bottle.
