AGE OF VINEYARDS: from 8 to 35 years
VINIFICATION: cold storage of grape crates for 15 days, pressing of the whole grape, fermentation in steel at low temperature (14°) and subsequent refinement on the fine lees (always in steel) until the end of August of the following year. After bottling, the wine rests for another 6 months before going on the market.
AGING: 10 months in steel and 6 months in the bottle

"It is essential to always produce wines that you would buy, wines that you would choose among others. We therefore begin to think about a new label in 2013, when we decide to overgraft old Dolcetto vines with the new and less known in the Langa, Sauvignon Blanc.
