The vines are planted on West, North and North-East facing slopes. These exposures allow the Chardonnay to mature slowly, gradually and completely. The soils are clay-limestone and stony. The grapes are pressed using a pneumatic press. After rigorous selection of the juices, the musts are fermented in temperature-controlled vats. 18 months on laths. Dosage: 6 g/litre The bubbles are fine and dense. In this cuvée, the Chardonnay reveals all its aromatic potential: fine bubbles, fresh and expressive nose with citrus notes.
Domaine Vin Deux Roches - Vignoble Bourgogne The Domaine is located in Davayé, Burgundy, with an extraordinary view of the Rocks of Solutré and Vergisson. Classified together as the 'Grand Site Naturel' of France, these two peaks were the inspiration for the name DEUX ROCHES (TWO ROCKS) and have become its emblem. For over 30 years, the two families have worked in these unique landscapes, seeking the purest expression of Chardonnay on clay and limestone soils. They produce elegant white Burgundies, characterised by minerality, in the appellations of Saint-Véran, Pouilly-Fuissé, Mâcon-Villages, Mâcon la Roche Vineuse and Viré-Clessé.
