    In the heart of the Côte d'Or, Savigny-lès-Beaune is a village with a long tradition in the production of sparkling wines using the classic method. Since 1955, Maison Paul Chollet has been producing its Crémant de Bourgogne, refining the quality and diversifying the range with the arrival of Gilles and Joël Remy in 2002. The vineyards are located in the valley around Savigny, where the south-facing slopes provide excellent quality Chardonnay and Pinot Noir grapes. The range includes Blanc de Blancs, Blanc de Noirs, Brut Rosé, Dosage Zero and 'Quatre Saisons', which also incorporates small percentages of Aligoté and Gamay.
