Located in the foothills of the Pyrenees, surrounded by its vineyards, the Domaine Gayda is a new reality in Languedoc, 25 km southwest of Carcassonne, in the village of Brugairolles. The owners Tim Ford and Anthony Record have joined forces with the winemaker Vincent Chansault to build the new winery in 2004, creating the new face of wine for the region. In the largest wine region in the world, Domaine Gayda is committed to creating wine with provenance and a sense of "being" that is a true reflection of quality and the diversity of Languedoc Roussillon. The new cellar, completed in time for the 2004 vintage, is at the forefront of offering the utmost care for the quality of the grapes. Although the equipment is of the latest technology, the process is very traditional with the meticulous classification of grapes and berries and the slow filling of the tanks by gravity. All operations are carried out by hand and each batch is vinified separately to allow them to express their individual character. Each process is monitored by sensation and taste; not from the computer. The wines are then aged in French oak between 9 months and 2 years, driven by the search for quality, the understanding of each vineyard and respect for this exceptional region is fundamental. Quality wines with the utmost care for the natural environment.
