Grape variety: 100% Chardonnay
Vinification and ageing: The Blanc de Blancs comes from 100% Chardonnay grapes harvested at the beginning of September. The grapes are brought to the cellar where they are put directly into a press that is used specifically for the Alta Langa. This machine allows a slower and gentler pressing by being able to control the temperature and keeping the must 'under vacuum' so as to avoid oxidation and enhance freshness and aromaticity. Next, fermentation begins and takes place in used wooden barrels where the wine then stays until it is drawn, which is done in late spring. After 38 months of ageing on the lees, the Alta Langa is disgorged and prepared for tasting.
