      The appearance is golden with greenish and slightly salmon reflections. The aroma is open with a dominant of toasted and buttered (brioche, bread crust); evolution on dried fruit (hazelnut, toasted almond), honey and spice bread. The taste is fresh, lively at the attack with a predominance of toasted notes and a creamy aftertaste.

      Grapes: 60% Pinot Noir from our historic Grand Cru plots over 40 years old, and 40% Chardonnay from the Grand Cru terroir of Mailly-Champagne. Harvest: Manual harvest and selection of the most beautiful grapes. Vinification: Alcoholic fermentation followed by a complete malolactic fermentation, both performed in old Burgundy oak barrels. Aging: The first eight months, aging of the wine in barrique on the lees, without batonnage to avoid giving too much fat to the wine. The oxygenation, obtained through the wood, reacts with the lees of the wine to enrich the aromatic palette of candied and sweet notes. Furthermore, it allows the wine to acquire antioxidant properties which guarantee a prolonged freshness after the foam. Minimum 7 years in the cellar. The so-called “square ring” bottles are traditionally closed with a cork stopper. This type of capping induces a slower evolution and develops empyheumatic aromas (toasted and spicy), very sensitive after 4 years. Disgorgement and dosage: Manual disgorgement. Extra-Brut dosage of 3 g of sugar per liter.
