The Baudana vineyards enclose 50 years of history in vines located on the Serralunga hill at 350m above sea level. Baudana enjoys a soil with unique characteristics thanks to its remarkable ability to store rainwater. The harvest of the grapes from this vineyard generally takes place around the third week of October. Fermentation starts quickly and then settles over a total duration of about 30 days, followed by another 10 of maceration. Most of the must ferments in a large oak barrel, where gentle punching down and pumping over are the only operations carried out during maceration. The wine is then aged in Slavonian oak barrels for about 32 months.
