Champagne Brut Blanc de Blancs 2007 - Salon
A mythical Champagne, the purity and balance of Mesnil's best Chardonnay for a collector's bottle.
At the origin of the myth there is a man. At the end of the last century, Eugène-Aimé Salon, the son of Champagne carters, without ever breaking ties with his homeland, chose the adventure and left for Paris to undertake a business in the tanning of furs. Eugène immediately finds his way, imposing himself and taking over his destiny and that of his business, developing it, and becoming a prominent figure in brilliant Paris at the dawn of the new century. Active and intelligent, Aimé, he loves life, pleasures, the best things and the best champagne, that's what he dreams of. He dreams of the best champagne that can be produced, a singular wine, all for him, a unique champagne. The links with the region that gave him birth are still alive: his brother-in-law, chef de cave, recommends it. The land has to be bought and he chooses his territory, the Côte de Blancs, the best cru, that of Mesnil-sur-Oger, and the most prestigious parcel, the one above the church, where the balance between sugar and acidity is perfect. His vision is precise: he will produce for himself, for his personal consumption, a champagne without blends. The first release is with the 1905 vintage in 1911 (although the Maison finds its official creation date in 1920), to satisfy an entourage of friends and enthusiasts immediately growing. Salon, spreads in the most sought after environments: the Maxim's of the golden years, will name it Champagne of the house. Since the great 1928 vintage, which sanctions the consecration of Salon, the need has remained the same: only exceptional vintages are destined to be vinified and marketed, in an edition that continues to be very limited.
