Champagne Dosage Zero - Bruno Paillard
Lively and greedy attack that expands generously on the palate. The aromatic richness of the nose is found in the mouth in a lively and chiseled texture. Narrow, salty and extremely persistent finish.
Crus: More than 30 crus coming from the noblest areas of Champagne whose composition is kept secret.
Assembling: Selection exclusively of the first pressing - the "cuvée", the purest - of the three vines that are vinified mainly in small oak barrels. The assemblage is dominated by the terroirs of the north of the Reims Mountain and by the first kilometers of the right bank of the Marne Valley for the Pinot Meunier which, in this cuvée D: Z is highlighted; then the Chardonnay and the Pinot Noir intervene in equal parts.
Reserve wines: An exceptional thing in Champagne, the «vins de réserve» account for half in the assembly; they are in fact the other essential actor of the cuvée D: Z. One part conducted the first fermentation in cask, to then be preserved in steel; others spent more than 10 years in the bottle, so autolysis intensified.
Aging: The aging is extended well beyond the legal duration: from 3 to 4 years in the bottle on the lees and then 6 months of rest after disgorgement.
