Doppio Erre Di stands for Delayed Degorgement Recently Degorged, in the sense that the degorgement (i.e. the final phase of the production of the Franciacorta method) is deliberately delayed after long months of aging, and that the bottles are delivered freshly degorged to ensure maximum freshness.
Produced with 100% chardonnay grapes, using only the first flower of the pressing, a part of the base wine is refined in wood. The wine evolves for 30 months in contact with the yeasts. It has an intense straw color with various greenish reminiscences, a very fine and persistent perlage; intense, fine and very articulate perfume, with a range of sensations in which, in addition to the yeast notes, notes of ripe fruit (apple, pear, peach), flowers and a touch of vanilla are recognized. The taste is full, concentrated, with bubbles that are not too invasive on the palate, soft and very pleasant final aftertaste.
