Pinot Grigio in prevalence. Flint notes combine with notes of passion fruit, citrus fruits and sage. In the mouth it is fierce, agile, fresh, with a powerful acid texture.

Vinification: after the harvest, which takes place strictly in the early hours of the morning, the grapes are transferred to cold storage, where they will remain for 72 hours at 0 ° C. A soft pressing and contact with the skins for about 8 hours will follow. The vinification continues with a further pressing and a natural decantation. The fermentation is carried out for 30% in barrels of 2, 3, 5 years and for 70% in steel tanks. In January we proceed with the assembly and the wine is bottled in March.
Aging potential: over 10 years.
