The first vintage of Cervaro della Sala produced was 1985, introduced on the market in 1987. This wine has won numerous awards and has won several important awards.

The 2021 vintage was characterized by a tendentially cold winter and a generally regular spring. At the beginning of April, when budding had already begun, a sudden drop in temperatures caused a reduction in production, without in any way affecting the future quality of the grapes, as well as a vegetative delay of about two weeks. A May with little rain but at the same time cool and a summer with sunny days, characterized by a good temperature range between day and night, allowed the vines to recover the accumulated delay and to ensure the correct ripening of the bunches. The good weather starting from August made it possible to carefully select the best grapes, choosing the moment of the harvest in order to seek the maximum expression of the varietal aromas. The Chardonnay harvest for the Cervaro della Sala, to be considered of exceptional quality but characterized by a reduced production, began during the third week of August with healthy, ripe grapes distinguished by excellent freshness and an excellent aromatic profile. The Grechetto harvest took place after about fifteen days, towards mid-September.
