VINIFICATION: Cold cryomaceration on the crushed grapes for 12 hours using dry ice which, in addition to extracting more aromatic and coloring substances and lowering the temperature, releases carbon dioxide and avoids contact with oxygen. Alcoholic fermentation takes place in an autoclave to minimize contact with oxygen by controlling temperatures at 15 - 16 ° C.
