Vineyard: 100% Pinot Noir.
Exposure: East, North-East
Surface: Ha 0.96.50, 4.890 screws bred with the classic Gujot system
Vinification: at a low temperature for 20-30 days with delestage on the yeasts for 9-12 months and daily battonage.
Aging: 3 months in bottle.
Organoleptic characteristics: great structure and minerality with intense aromas of tropical fruits and, with aging, also floral. Despite being a young and fresh wine, this Pinot has an exceptional aging attitude.
Food matches: excellent as an aperitif, appetizers and light dishes in general, first courses, fish and shellfish, cheeses.
