The warm and bright straw color gives us the measure of fullness as well as the indication of complete maturity. Primary aromas are pronounced and slightly aromatic. There are hints that can be traced back to the lysis of yeasts and also ethereal sensations resulting from malolactic fermentation. To the taste the wine appears endowed with an interesting acidity and finesse.
Soil: medium-textured, with veins of red sand slightly higher than the average of the area.
Characteristics: the Favorita grape is one of the few white vines typical of Piedmont. Very similar to Vermentino characteristics, this grape was once used as a table grape. In the eighties then some companies began to vinify small quantities, obtaining good results. Wine ready to drink and discreetly maintained over time as it comes from strains implanted in a land suitable for the production of Barbaresco, then a good consistency that also gives the Favorita the characteristics of structure, complexity and persistence.
Technical notes: our production philosophy, for this reason as for our other wines, is to contain at most the cellar operations to try to bring the most intact "bunch of grapes" into the bottle. The grapes are pressed, pressed, left to cool for one night, decanted and left to ferment with the addition of selected yeasts. For the small part (about 10%) that is produced in barrique the procedure is the same. Then the assembly, a decanting, a light filtration and the wine is ready to go in the bottle.
