      This rare passito is the result of Malvasia and Corinto Nero grapes grown on the volcanic soil of the island of Salina. The grapes dried in the sun on cane racks are then vinified. This is followed by slow fermentation and maturation in small oak barrels. An interesting combination with soft blue cheeses and goose liver, with pastries, chocolate desserts and ice cream.

      SOIL - Of volcanic origin with a good presence of sand.

      ALTITUDE - Coastal less than 50 meters above sea level

      VINEYARDS - Typically grown in espalier on classic and traditional high density terraces (over 6,000 vines / hectare).

      CLIMATE - Insular hot arid with rainy and mild winters.

      HARVEST - Manual, with advanced ripening usually after 20 September.

      VINIFICATION - After harvesting, the grapes are hung out to dry in the sun for about 20 days on traditional cane racks. The passola, very rich in sugars, is pressed and after a brief cold contact with the skins, the separated must undergoes a slow fermentation, at a controlled temperature, up to the natural fermentation block.

      MATURATION - For about 5 months in 225 liter barrels of carefully selected oak.

      AGING - At least 3 months in the bottle.

      TASTING Color - intense golden yellow with coppery reflections. Bouquet - full and rich in very particular hints of honey and Mediterranean plants such as rosemary and oregano. Taste - sweet, full and soft, with great structure, pleasantly aromatic of Mediterranean scrub, very persistent dried grapes and apricots.

      ALCOHOL CONTENT - 13.5% - 14.0% by vol.

      RESIDUAL SUGAR - 140 g / l.

      SERVING TEMPERATURE - As an aperitif 12 ° - 14 ° C. For dessert and meditation 16 ° - 18 ° C.

      GASTRONOMIC COMBINATIONS - The combination with soft blue cheeses and goose liver is interesting. It goes well with pastries, chocolate desserts and ice cream. Excellent for meditation.

      STORAGE - In a cool (13 ° - 15 ° C.), not humid, away from light.
